8 Baby Gold Potatoes | |
1 block Monterey Jack Cheese | |
1 Sweet Yellow Onion | |
2 Tablespoon Salt | |
1⁄2 Cup Brown Sugar | |
1 Cup Mozzarella Cheese | |
1 Handful Thyme | |
3 Tablespoons Soy Sauce |
Directions

Step 1
Take your golden baby potatoes and give a them15-20 minutes to boil. You don't want these too soft but not too hard either.

While those are boiling, let's fry up our filling. Remove the skin from your onion.

Chop your onion and get it into a hot frying pan. We're going to brown these up. Add soy sauce and brown sugar to the mix.

While your onions are frying, let's pull the potatoes out of the water. You're going to slice these in half and remove a good chunk of potato from the middle.

Place your potatoes onto a baking sheet covered in tin foil or parchment paper. We're going to fill each potato with the onion filling we fried up.

Next, slice up the monterey cheese into slices creating an X on top of each potato. Get these into the oven at 400 degrees for 20 minutes.
