Ingredients

Adjust Servings
1 tablespoon extra-virgin
14 onion, diced
4Cloves of garlic
12 teaspoon ground cumin
14 teaspoon chili powder
1 (15-ounce) can pinto beans, drained and rinsed
12 cup chicken broth
1/3 Cup freeze dried cilantro

Directions

Step 1

In a small skillet over medium heat, heat the oil.

Add the onion, garlic, and sauté until the onion is soft, about 3 minutes.

Add the beans and cheese and bring to a simmer.

Mash the beans with a potato masher.

Continue to simmer until well mashed, leaving some chunks, if desired, and serve. Add a little freeze-dried cilantro,

Serve this with a tortilla, pan-toasted and a side of sour cream and enjoy!
