Bariatric White Bean Puree

This is one of my favorite purées- its quick and it hits the spot. The perfect soft stage recipe if you’re having weight loss surgery.

Ingredients

Adjust Servings
1/2 Teaspoon Thyme, dried
1/2 tsp Garlic powder
3 Garlic cloves
1 cup Chicken broth, low- sodium
Salt and black pepper
3 tsp Butter, unsalted

Directions

Step 1

Melt the butter in a medium saucepan. Add the garlic and cook over medium heat, stirring frequently for about 3-5 minutes.

Step 2

Next, we’re adding cannellini beans followed by a cup of chicken broth. Add a pinch of garlic powder followed by some thyme- there’s never not a good time for thyme- speaking of thyme let this simmer for about 12 minutes.
This is the consistency you’re looking for

Next, I’m blending this up into a nice puree because well, we’re doing puree. Hooray puree!

Step 4

Season with salt and pepper. Top with optional Parmesan and parsley, and serve warm.
Soft does not have to suck!
